Melissa Weller, a pastry maestro with a string of accolades, including cookbooks, pastry stints at renowned restaurants, and her role as a co-founder of Sadelle’s, has collaborated with Fish Cheeks co-owners Jenn Saesue and Chat Suansilphong (affectionately known as Bub) to open Bub’s Bakery in September. This bakery, nestled at the border of Noho and Soho, offers a delightful array of classic pastries, all crafted to be gluten-free, soy-free, nut-free, sesame-free, and vegan.
